Tonight was Pizza Night! Last week we had pizza night too! Last month we had 3 pizza nights! We love Pizza! Pizza!
Having a family with Celiac Disease and two little that can’t eat anything with corn in it makes pizza crust tricky. We’ve been experimenting and have found a very passable home made version that is gluten and corn free. The results have been a little different each time but has been gobbled off the plate so fast that I don’t need to ask how it tastes.
3 C all-purpose GF flour blend (I use Bob’s Redmill Gluten Free All Purpose)
1/2 tsp baking powder
1/2 tsp guar gum
1 tsp salt
1 1/4 C hot water (about 100°F)
1 TBSP honey
1 TBSP olive oil
Set your oven to proof bread
mix honey in to 3/4 C hot water, sprinkle yeast on top and let sit about 5 minutes.
It should look as above, if it is not big a fizzy your yeast is dead and you should get a new container. Also your water temperature is VERY important, too hot and you will kill the yeast and it won’t rise! Do not make the mistake I did the first time and use 100°C water! Farenheit is your friend here.
Mix dry ingredients together in a large bowl or mixer with paddle attachment
add oil and extra water to the dry ingredients. When the yeast is big and frothy, add that to the mixer too. Mix until well incorporated.
Turn out into an oiled metal or wooden bowl, cover, and place in a draft free warm place (oven set to 100*F) let rise for about an hour, or doubled in size.
While rising I recommend sitting and having a coffee, watching a show with your little guy, playing Minecraft or grabbing a tablet and chilling with your favourite time waster.
Shape into pizza crusts on parchment paper, return to oven to rise again for about 30 min. Once risen, press the crust thin, very thin to the size you want.
Pre bake shells at 350 for 8-10 minutes
Topped pizzas bake at 425 for about 10 minutes
Favourite toppings in our house include:
Pineapple, Feta Cheese, Ham, Spinach, Shitake Mushrooms, roasted garlic, and of course heaps of Mozzarella on top!
